The Los Santos region is widely recognised for producing some of Costa Rica’s most exceptional coffees. Nestled at high elevation, smallholder farms in this area supply cherries to the family-run Ivan Solís Micromill — a dedicated operation focused on selecting only the best fruit and applying meticulous processing methods to craft unique, high-character coffees. The mill’s commitment to precision and quality shines through in every stage of production.
This lot is processed using a carefully executed natural method. Cherries are handpicked at peak ripeness before being placed in float tanks, where only the densest, highest-quality fruit sinks and is selected. After sorting, the cherries are transferred to raised drying beds and turned regularly over 30–40 days. This slow, attentive drying approach preserves sugars, enhances clarity, and builds a balanced sweetness throughout the cup.
The resulting profile is deliciously expressive — a smooth and rounded espresso with tangy orange brightness, sweet strawberry undertones, and a rich cacao finish. A standout example of the elegance and depth Costa Rican naturals can offer.
