This exceptional lot comes from Danche Village in the famed Gedeo Zone, just south of Yirgacheffe — a region celebrated for its centuries-old coffee tradition and vibrant cup profiles. Here, smallholder farming families tend plots of less than two hectares, using traditional intercropping methods that nurture both biodiversity and cup quality. The cherries for this lot are delivered to the respected Chelbesa wet mill, where precision processing elevates their natural clarity and sweetness.

After careful hand selection, cherries are floated to remove low-density fruit, pulped, and placed into sealed tanks for an extended 84–96 hour anaerobic fermentation. This slow, oxygen-free environment builds structure and aromatic intensity. Once fermentation is complete, the parchment is double-washed to refine acidity, before being dried on shaded beds for 13–15 days until reaching a stable 11.5% moisture content — a gentle method that protects delicate florals and stone-fruit notes.

The resulting cup is vibrant, elegant, and beautifully expressive, showing layers of fresh nectarine and ripe mango, lifted by a bergamot-like citrus florality. It’s an outstanding example of the nuance and purity that Yirgacheffe is known for.
